The concept of these dinners is based on the influence of Peru’s three main regions: Coast, Highlands, and Jungle. This is where "KIMSA" comes from, a Quechua word meaning "three," honoring these fundamental regions of Peruvian gastronomy. Each contributes ingredients, techniques, and flavors that have evolved over time, blending with influences from Chinese, Japanese, and African migrations and cultures.

This fusion of tradition and evolution defines my cuisine—an experience where flavors, history, and creativity come together in every dish. My menus are inspired by my roots as a Peruvian chef, with the goal of showcasing the richness and diversity of Peruvian cuisine. Every dish reflects my personal touch in presentation while staying true to tradition.
