Coconut Rice Pudding
Description:
Delicious take on a rice pudding treat to enjoy for breakfast or dessert!
Ingredients:
1/2 cup white rice
4 cups coconut milk
1 cup water
1 tsp. vanilla extract
4 cinnamon sticks
3 cloves
1/2 of the peel from an orange
1/2 tsp. cinnamon
1/2. cup maple syrup
2 cups of your favorite fruits or berries
Coconut flakes (Garnish)
Fresh mint (Garnish)
Instructions:
Place the water in a saucepan and add the cinnamon sticks, cloves, and orange peel. Bring it all to a boil for 2 minutes.
Pass the water through a strainer and return the strained water to the saucepan.
Add the coconut milk and rice to the water and cook it over medium heat while stirring from time to time until it is cooked.
Cut your desired fruits while the rice is cooking.
When the rice is cooked and creamy, remove it from the heat. Add the maple syrup and vanilla extract.
Serve the rice pudding on a plate and add your desired fruits.
Top it off with cinnamon, mint, orange zest, coconut flake, and maple syrup to your liking.
